At Polonza Bistro, we’re dedicated to creating a warm, welcoming atmosphere where guests can enjoy homestyle comfort food, expertly crafted coffee, and signature cocktails. Founded in 2011 by Judy Ring in her hometown of Pensacola, Florida, Polonza was named after the term Spanish explorers once used for Escambia Bay. Our goal has always been to honor the history of Pensacola while fostering a true sense of community, both among our team and with every guest who walks through our doors.
